Potato Croquettes
- 1 kilogram potatoes
- 200 grams cheese (grated)
- 2 tablespoons flour
- 3 eggs
- 1 teaspoon salt
- ½ teaspoon pepper
- 200 ml vegetable oil
Method
- Boil the peeled potatoes for 25-30mins, drain and mash them, while they are hot, add the cheese, flour eggs and seasoning, mix well and knead to make a consistent paste.
- Take a walnut sized piece and roll them into finger shapes, arrange them on a tray sprinkled with flour.
- Heat the oil in the frying pan and cook until golden brown, remove them onto kitchen paper to absorb any excess fat
